SNOW photo dump. And Banana Bread Recipe!

RUNS: After having barely any snow last year we have now had it three times! It has all been manageable with only a few inches at a time and it mostly melts in between but then that has also made for some muddy trails. Im not complaining about it yet though. The novelty is still there but not sure how much longer that will last. Luckily there is no more in the immediate forecast. Just cold.

So here I present to you a photo dump of some of the snow pics that I've taken over the past two weeks...

A tragedy of the snow and winds was this tree. Came down right on the bench.
Good thing Sue wasnt sitting there when it happened! 
And then of course what is better on a snowy day the hot yoga!!
EATS: Lets just get to the good stuff. I made this Banana Nut Bread for Rik and the boys. They love it and eat it all within a day or two. This time I was nice and added some chocolate chips. I barely had it out of the oven when Rik already had the two ends off and eaten. We'll see how long it takes them to get though it now!
Banana Nut Bread w/chocolate chips
Banana Bread
Recipe (adapted from Betty Crocker)

Makes 1 loaf

1 3/4 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3 over ripe mashed bananas
1/3 cup applesauce
2 TBS milk
2 flax eggs
1/4 cup chopped walnuts
1/4 cup chocolate chips

Mix 1 cup flour, sugar, baking powder, baking soda, and salt. 
Add mashed bananas, applesauce, and milk.
Mix well.
Then add flax eggs and remaining flour until well blended.
Stir in nuts and chocolate chips.

Pour batter into well greased loaf pan.
Bake in a 350degree oven for 55 to 60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes on a wire rack. Remove from pan and cool thoroughly.

I still have two overripe bananas left. Any suggestions as what to do with them?

  3. Yummy banana bread! I've made some different cookie recipes with overripe bananas before that are pretty good.

  4. We just got dumped on this past week with snow too. After last years mild winter, I have to remember how to run in it!

    Yummy bread! I suggest freezing the leftover bananas. Save 'em for smoothies or bread for later.

    Looks like you had fun in the snow! I keep wishing it would snow over here (in WA) but I don't think we'll have such luck this year.

  6. I always freeze my leftover bananas. That way I can use them to make banana ice cream, smoothies, or whatever. Of course, I freeze pretty much everything leftover because you just never know. :)

    1. Believe it or not I have never froze bananas. probably because I don't do smoothies so I don't think of it.
